Isn't the above picture so peaceful and calming? I really wish I was there right now, because I wouldn't mind enjoying some warm weather and a little ocean breeze. This is what the weather is like in Pennsylvania. It stopped snowing for the moment, but we're supposed to be getting another 1 - 3 inches before the end of the day.

Days like this make me want to bake cookies.

You know the only thing better than a freshly baked pan of chocolate chip cookies? Having them with ice-cream.

Okay, I feel better now.

A Happy Monday Indeed...


                                                  YUP, IT'S ME AGAIN.

I hope that you all had a wonderful weekend. I know, I know, I used that picture of that cute little duck before, but he's just so adorable I couldn't help it. Oh and I'm still reading my bible and working my way towards Revelations. I'm currently in the book of Psalms and I'm just starting chapter 59. 
Oh and here's a quick update. Since I've posted last, the seller from eBay fully refunded hubby his money. I was worried at first because it didn't seem like she was willing to cooperate, but it all worked out in the end. God is good. Also, hubby told me that since the issue was resolved, he would buy me more lamps. All I had to do was pick them out. I was really happy to hear that, but with everything that happened, I didn't want to search eBay again. I went to Home Goods instead and found these.
The lamps from eBay were only $40.00 for the pair so these were more expensive.
These were going to be $120.00 plus tax for the pair. I called hubby up right away and told him to hurry and bring his credit card since these were the only two they had. He was so sweet and didn't even complain.. You know, I'll have to remember this the next time I'm mad at him... lol. It also made me remember the funny little cartoon clip below. I showed hubby and he got a kick out of it, too.

Oh Well...

Okay, I have good news and bad news. The good news is that my lamps arrived Friday.

The bad news is that one of the lamps didn't survive the shipment.

If you take notice, the seller just stuffed the lamp in the box and mailed it. She didn't bother cushioning it with newspaper, peanut packaging, bubble wrap or anything. The box itself wasn't even marked fragile, so it's surprising that the other lamp didn't break as well.

My husband ordered the lamps for me on ebay. In trying to resolve this issue, he emailed the shipper to let her know that one of the lamps was damaged. Even though it wasn't packaged properly, the shipper blamed FedEx and told my husband to contact them instead. Fed Ex informed us that we weren't able to file a claim because it was the shipper's responsibility. That message was then relayed to the shipper and we're just hoping that she has already filed the claim. That's pretty much where we are right now, but in the meantime, I'm back to looking for more lamps... :(

I did however try a new recipe. It's a vegan dish that I found on Pinterest and decided to make for my daughters.

Sweet Potato and Quinoa Patties


2 cups baked sweet potato, skins removed and mashed (2-3 potatoes)
2 cups cooked quinoa
medium yellow onion, diced
3 cloves crushed garlic
1 tablespoon chopped fresh thyme (more to garnish)
1 tablespoon extra virgin olive oil
sea salt
extra balance vegan butter or coconut oil for cooking


Prepare quinoa according to package instructions
Preheat oven to 350 degrees and bake sweet potatoes for about an hour or until soft. Remove skins, mash with a fork to remove all chunks.
Place mashed sweet potatoes in a large mixing bowl.
In  a sauté pan, combine onions, olive oil, a hearty pinch of sea salt, and cook over medium-low heat until onions are translucent. Add garlic and cook an additional minute, stirring continually to prevent the garlic from burning. Add thyme at the very end and mix well.
Add onions, quinoa, 1/4 teaspoon sea salt and a pinch of pepper to the mixing bowl with the sweet potatoes and stir until well combined.
Form mixture into golf sized ball, flatten into a patty and cook in earth balance vegan butter in a non stick pan for a few minutes on each side (you want them to brown up and crisp). Repeat to make as many as you'd like. Enjoy with a generous sprinkling of fresh thyme leaves and an additional sprinkling of salt. Save any leftovers in the refrigerator to make later. 

My daughters loved it and believe it or not, my husband enjoyed these patties, too.

This cafe is a yawn....
I'm baaaaacccckkkkkk. Okay, I know I'm kind of late with this, but... Happy New Year! This is my first posting for 2015... Woohoo! I don't know about you, but I'm really excited. It's a brand new year to play around with. Hmmm... what to do... what to do? Well for starters, my daughters and I are planning to eat clean for 90 days. Both of them actually want to go vegan. I told them that going vegan is really extreme when you're used to eating like me, but I wouldn't mind trying to become a vegetarian for 90 days. Oh and I can't back out of it, either. They made me pinky promise. Oh dear, dinners are going to be very different in my house for a while, but I'll keep you all posted on how things go.

With that said, when I was wondering what to have for my first meatless meal, I knew just what to do. I made a big pot of vegetable soup which was delicious. My sister taught me how to make this many years ago and I've been using her recipe ever since. Hubby isn't a big fan of eating a bowl full of vegetables, but my daughters love it and they always go for seconds.

Also, after what seems like forever, I finally decided on the lamps I'm going to get for my living room. All I'll say for now is that my husband ordered them for me on ebay. I'm waiting for them to be shipped to me, so I'll share a picture when they finally arrive.

Well, here's to a happy, healthy and prosperous New Year. Now, let's see how many months it takes until I stop writing 2014 on everything... ;)
